Vegan Side Dish: Pasta Salad

I like to show off common dishes that carnivores eat all the time, when I can. Whenever I’m invited to a BBQ, chances are I’m bringing this dish. I admittedly stole this recipe from my mother and it’s a common dish that always shows up at large home functions and gatherings. This is a quick and easy dish that will show your friends and family that we as vegans eat more than just “rabbit food”!

Pasta Salad

INGREDIENTS:

• 1 package (16-oz) Tri Color pasta
• 3 cups of fresh or frozen broccoli, chopped
• 3 cups of plum tomatoes, cut in halves
• 3 cups of chopped cucumbers, chopped
• 1 cup of shredded carrots
• 1/2 bottle of Zesty Italian dressing

INSTRUCTIONS:

1. Begin cooking pasta according to instructions
2. Begin chopping broccoli and add it into the pasta half way through cooking
3. As the pasta and broccoli cook, begin chopping your tomatoes and cucumbers
4. Drain the pasta and broccoli
5. Rinse shredded carrots under cold water (this brightens the color)
6. Add all ingredients in a bowl
7. Add half of the Italian dressing, toss, and taste
8. Add in additional dressing to taste and toss until ingredients are well combined
