Fall is already here and the weather is beginning to cool, but I don’t want to begin putting on layers before I share this summer salad. This is great as a starter, side salad or a light meal. And it’s super simple to make.

Watermelon, Cucumber, and Blueberry Salad
• 3 cups cubed seedless watermelon
• 3 cups chopped english cucumber
• 3 cups of blueberries
• 8 fresh mint leaves
• 3 tbsp. of lime juice
• Salt and pepper, to taste
In a large bowl, toss all ingredients together. Serve immediately.
If not serving immediately, leave out salt. Refrigerate salad, covered, up to four hours. Just before serving, toss with salt.
